I've noticed that, too. I think the issue with Coco in Three Houses was that being a DLC character they didn't have a lot of space to flesh out her personality split and most of her convos are indoors. In Three Hopes she's part of the story from the get-go so they're able to do more with it.
(The lack of comedic music helps too, not gonna lie.)
I am, yes. <3 A big guy makes Ashe something to eat and Ashe cries over memories of the past while eating it...I really like how they revisited that from the Dedue convo.
